We present a home-style version of a cocktail found on our latest drinks list. This is a batch pre-mixed which is packed with the tastes of the Christmas time, which makes it excellent for hosting a holiday party. Any leftover syrup for morning drinks, sweets, or for another batch of the drink.
The Bikini Cocktail
Makes enough for 10 guests
Ingredients for the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Cocktail (makes 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Put all the items into a pan, bring to a simmer, stirring to dissolve. Next, turn off the heat and leave to reach room temperature completely. Transfer to a clean bottle, cap it and store in the refrigerator, where it will keep for about a month.
For the Premix: Combine every spirits and syrup into one big jug, allow it to infuse for one hour, then filter it , ideally through a fine cloth, to ensure it's completely strained.
For serving: Pour 85ml of your premix to a stirring glass containing ice, gently stirring gently for one minute to chill. Pour into a cold coupe glass or equivalent, garnish with the cranberries and complete it with a quick spritz of the essential oil above the glass.
